I write this newsletter up in the air on my way to St. Martin with hubs for a wedding/ long overdue “no kids” getaway. I’m already imagining myself on a sandy beach with a drink in hand, which makes sense that 5 minutes into settling in my seat I realized that I left my computer charger behind which may or may not have been a subconscious decision. All this to say, I need a damn vacation.
Parenthood is incredible but it sure does take it out of you… so does being a working mom…a working mom who travels to teach people dance. My near future includes soaking up the sun and eating fresh catch but until then I’ll leave you with a very simple recipe that is not gonna take a lot of effort but will be rewarding, satisfying and uber quick due to some shortcuts that have made our dinners a breeze lately.
We are making delicious Korean style beef bowls that come together super fast. This recipe will include making a really incredible marinade for the beef that includes ginger and garlic (use the frozen cubes, trust me) and some staples that you may already have in your fridge. If you can prep this the night before cooking, you get really delicious results, but it’s still great even with a short marinating time. The shortcut is to use your microwave and make frozen rice… yup, I said it. I have no shame about it and you shouldn’t either. Frozen rice is going to save the day and the results are going to surprise you. If you love to throw a quick bowl or dinner together, this hack is your friend. To all my friends out there juggling all the balls in the air, give yourself a break, take a breath and make a dinner this week that includes frozen food. Enjoy this weeks deliciousness!
