Let’s cut to the chase. If you are not a huge football fan (me) but you love snacks (also me), the Superbowl is just one big excuse to eat elevated bar food, laugh with friends and watch the halftime show. Usher’s performance will be the highlight for me aside from the pile of wings and dips that I will be devouring on the big day. Today, I’m sharing with you my menu for a little Superbowl gathering I’ll be having here this weekend. My plan is to make things ahead, make it fun, healthy-ish, and of course delicious. Let’s go…
I decided that this year I will be doing a serve and build your own chili bar with both a vegetarian and turkey chili. I’ve been working on a veggie chili that hits all the notes I need: thick, hearty, and flavorful. I take issue with veggie chili that is watery and tasteless, and this one here is so good…….I’ll make a spread of toppings including shredded cheese, sour cream, pickled onions, cilantro, corn chips, and jalapenos. The weather report is calling for rain this Sunday so I figure this will be a filling bowl of warm and cozy that everyone can get behind. Chili is great because it can be made a head and kept warm either on the stove or in a crock pot. I love the idea of baked potatoes and chili but instead will be throwing some potatoes in the air fryer to serve a long side to give a baked potato/ chili fries kinda vibe. Yum.
Every year, I also make a batch of wings, these can be “oven-fried” or air-fried and come out super crispy and delicious without having to fry them in oil, something that I loathe. Of course you can add some cut up carrots and celery to this mix for health purposes.
I have a few friends that are vegetarian and vegan and this vegan queso with chorizo dip is always a winner. My husband even prefers this queso to the real thing and it’s made with vegetables which makes it “guilt-free”.
Another fantastic idea that is always a winner is my Cubano Sliders on Hawaiian rolls, with just a little prep, you make fantastic pull apart sammies that are handheld morsels of delight.
